Ingredients

  • The white part of 1 leek, cut into pieces
  • 3 to 4 garlic cloves
  • 2 zucchini, cut into pieces
  • 1 head of broccoli, cut into pieces
  • 1 can (398 ml) white beans, drained and rinsed
  • 1 L (4 cups) vegetable broth
  • 120 ml (½ cup) 15% cooking cream
  • 60 ml (¼ cup) Nutterie pumpkin seeds
  • 60 ml (¼ cup) Nutterie pistachios
  • 1 small bunch of fresh basil
  • 120 ml (½ cup) olive oil
  • Salt and pepper, to taste
  • Prep time: 10 to 15 minutes
  • Cook time: 50 to 60 minutes
  • Total time: 60 to 75 minutes

Instructions

  1. Preheat the oven to 425 °F (220 °C).
  2. Arrange the leek, garlic, zucchini and broccoli on a baking sheet. Season with salt and pepper, then drizzle with olive oil.
  3. Roast for 35 minutes, or until the vegetables are tender and lightly golden.
  4. Transfer the roasted vegetables to a large pot. Add the white beans and pour in the vegetable broth.
  5. Bring to a boil, then reduce the heat and simmer for 15 to 20 minutes.
  6. Using an immersion blender or regular blender, blend the soup until smooth. Add the cream and stir well. Taste and adjust the seasoning with salt and pepper.
  7. To make the pesto, add the pumpkin seeds, pistachios and fresh basil to a mortar and pestle or small food processor.
  8. Gradually add the olive oil and blend until a pesto forms. Avoid over-processing so the pesto keeps a slightly crunchy texture.
  9. Serve the soup hot and generously top with the pumpkin seed pesto. Finish with a few fresh basil leaves.

Tips

    • For an extra creamy soup, use an immersion blender directly in the pot. Keep the pesto slightly chunky to add a delicious texture and crunch to every bite.
