There is something about summer BBQs and Brussels sprout based salads that simply go hand in hand together!

Of course, we'd adding in a Nutterie twist with some pecans and dried fruit!

Brussels pecan heaven - the salad

Ingredients

  • 1 cup Pecans
  • 1 to 1.5 lbs of Brussel sprouts (halved)
  • 1/3 cup of sliced Cranberries
  • Honey (to taste)
  • Goat cheese (optional and to taste)
  • Olive oil, salt, pepper (to taste)

Instructions

  1. Grill or sauté the halved Brussel sprouts (in wok, pan or on foil on the BBQ)
  2. Separately sauté the pecans until you see them darkening slightly
  3. Mix in the Brussel sprouts, pecans and cranberries. Add salt, pepper, olive oil, honey (to taste) and goat cheese (optional)

    Enjoy! 

Tips

  • Enjoy warm right away or cold the next day.
  • For a more robust roasted flavour, toss all the ingredients into a bowl, toss and  roast in the oven at 350 for 30 minutes.
