Ingredients
• 1 ripe banana (for natural sweetness and binding)
• 1 1/4 cups roasted sesame seeds (Nutterie’s premium selection)
• 2 tbsp pistachio powder (optional, for extra depth and color)
• 1 tbsp matcha powder (for a balanced earthy flavor)
• 1 cup milk chocolate wafers (Nutterie’s smooth and creamy selection)
• Sea salt for sprinkling (to enhance all the flavors)
Instructions
1. Preheat the oven to 170°C (340°F) and line a baking sheet with parchment paper.
2. Prepare the ''dough'' by mashing the banana until smooth in a mixing bowl. Add sesame seeds, matcha powder, and pistachio powder (if using), stirring until a cohesive dough forms.
3. Shape the cookies into small rounds and place them on the prepared baking sheet. Bake for 15-17 minutes, or until the edges are lightly golden and the cookies hold their shape.
4. Let the cookies cool completely before adding the filling. While they cool, melt the milk chocolate wafers in a heatproof bowl over a double boiler or in short bursts in the microwave, stirring until smooth.
5. Assemble the cookies by spreading or piping melted chocolate onto one cookie and gently pressing another on top, forming a sandwich.
6. Finish with a sprinkle of sea salt and let them set before serving.
