Instructions
- Preheat the oven to 170°C (340°F) and line a baking sheet with parchment paper.
- Prepare the ''dough'' by mashing the banana until smooth in a mixing bowl. Add sesame seeds, matcha powder, and pistachio powder (if using), stirring until a cohesive dough forms.
- Shape the cookies into small rounds and place them on the prepared baking sheet. Bake for 15-17 minutes, or until the edges are lightly golden and the cookies hold their shape.
- Let the cookies cool completely before adding the filling. While they cool, melt the milk chocolate wafers in a heatproof bowl over a double boiler or in short bursts in the microwave, stirring until smooth.
- Assemble the cookies by spreading or piping melted chocolate onto one cookie and gently pressing another on top, forming a sandwich.
- Finish with a sprinkle of sea salt and let them set before serving.
