Our co-founder’s favourite dish, this soup is refreshing, filling and low on calories. Topped with some delicious Nutterie walnuts, the soup will leave you wanting more and more.
INGREDIENTS:
- 2 cucumbers
- Plain yogurt (1 lb)
- Water (equal parts to the amount of yogurt you put in) ***
- 1-2 garlic cloves
- 2 - 3 tablespoons of crushed walnuts
- 1 bunch fresh dill (to taste)
- Oil (2 tablespoons)
- Salt (to taste)
INSTRUCTIONS:
- Grate the cucumbers and put them in a bowl.
- Beat the yogurt with a fork until it gets liquid and pour it over the cucumbers.
- Add the equal part of water and mix everything together.
- Add the crushed garlic, the walnuts and the minced dill as well as salt and oil to taste.
- Put into the refrigerator to cool and serve cold.
*** Be mindful that the thickness of your yogurt can affect the overall consistency of the soup. We recommend that you use equal parts of water but it’s something that you can quantify according to your taste. 😍
