Valentine's Day Special: Almond Flour Chocolate Chip Cookies

Ingredients:

- 2 1/2 cups blanched almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup unsalted butter, melted
- 1/4 cup organic cane sugar (or granulated sweetener of choice)
- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 cup chocolate chips (use heart-shaped chocolates or cut your own from a chocolate bar for extra Valentine's flair!)
- Optional: 1/4 cup sliced almonds or walnut pieces for topping

Instructions:

1. **Preheat Oven & Prepare Baking Sheet:**
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. **Mix Dry Ingredients:**
- In a large bowl, whisk together the almond flour, baking soda, and salt, ensuring there are no lumps.

3. **Combine Wet Ingredients:**
- In a separate bowl, mix the melted butter, coconut sugar, egg, and vanilla extract until smooth.

4. **Combine Wet and Dry Ingredients:**
- Gradually add the wet ingredients to the dry ingredients, stirring until a cohesive dough forms. Fold in the chocolate chips.

5. **Shape the Cookies:**
- Take a small amount of dough and roll it into a ball. Place it on the prepared baking sheet and gently press down to flatten slightly.
